It’s another episode of Cooking with Chef Fuyu! Mushroom Risotto is on the menu tonight~ This recipe can be vegetarian by using vegetable stock instead of chicken broth and not using meat in the recipe.
I stumbled on to this recipe on Reddit, r/eathealthyandcheap. OP found it from another website called Nerds With Knifes. This recipe required a lot of chicken broth, we used more then what the recipe stated. I believe we went through 4 cans of it and the serving size was for 6, but we managed to eat every last morsel of it which was surprising. Now that I think of it, we had a few large eaters with us. That’ll be something you should keep in mind. Another interesting point is that they were still hungry as well. It’s a good thing we had dessert ready afterwards.
We had to go to the Italian supermarket for most of the ingredients which was a very fun experience for me. It’s interesting to see how different supermarkets are. And the staff there was friendly and helped me find the Arborio rice when I couldn’t find it.
Anyways, finding most of the mushrooms stated in the recipe was kinda of hard. So we just made do with brown mushrooms, oysters and portobello mushrooms. It still turned out pretty well. I loved making this dish. There were some parts of the recipe that confused me, such as the step referring to the dried mushrooms. For some reason I didn’t register the words “dried” so we attempted that step with the fresh mushrooms.
I thought this recipe had enough steps to allow everyone to have a task. The tricky part was the cooking of the rice. We had never cooked risotto in our lives before. This was the first time and we were running into complications; we kept running out of chicken stock! Luckily we managed to find a few extra cans to use.
Total cooking time for us was about an hour in total. Remember, we’re students and barely know what’s going on in the kitchen. If you’re more skilled then you’ll be able to pull of this recipe in the actual stated time – 40 mins. Also the mentality that there is no such thing as too much cheese does not work in this dish. There is such a thing as too much cheese and we definitely added to much of it. Actually, it was my fault. I added too much cheese in it. The cheese blanketed the savoury mushroom flavour. Sorry guys. ><
Overall the dish was delicious and I’ll be happy to try this again. Below are some photos from cooking.
